A HEAD chef at a pub in Britwell Salome has won an award

A HEAD chef at a pub in Britwell Salome has won an award.

Andrew Hill, who runs the Red Lion with his partner Eilidh Ferguson, was named gastropub chef of the year at the Budweiser Budvar Top 50 Gastropub Awards.

The awards, held in Hitchen, were organised by the Publican?s Morning Advertiser and hosted by celebrity chef Tom Kerridge.

Mr Hill, 37, said: ?It was totally unexpected. We thought we were just there for our ranking.

?We knew were in the top 50 gastropubs but we hadn?t applied for anything, so when my name was mentioned I was blown away. I don?t think I?ve ever been as shocked.

?Tom Kerridge was saying, ?this chef has been at his place for three years now and does a lot of smoking and curing? and Eilidh said ?this sounds like a nice place to go!? I think she was as shocked as I was.?

The pub was placed at number 25 in the top 50 gastropubs in the country. In August the Red Lion was named best food pub in the South-East and London in the Great British Pub Awards, also run by the Publican?s Morning Advertiser.

It is also listed in the Michelin Guide and won an award for its use of local, seasonal and organic produce in the 10th anniversary edition of Sawday?s Special Places Pubs and Inns of England and Wales.

Mr Hill added: ?The whole team?s very dedicated and we put our all into everything we do. We try to create an atmosphere that we would like if we were to come and visit and the food we?d like to eat.

?There?s no secret to success, apart from being true to what you believe in, honest in your approach and giving the best you possibly can. I?ve been cooking for 20 years now and I still get butterflies in my stomach twice a day before service.?

The couple used to run the award-winning Half Moon at Cuxham.
