Michelin-starred chef gives students cooking lesson
A MICHELIN-starred chef gave pupils at the Piggott School in Wargrave a cooking masterclass.
Alan Murchison, head chef at L’Ortolan restaurant in Shinfield, showed the food technology and catering students how to prepare fish.
He then served up two dishes — bream with artichoke, tomato and fennel and brill with orzo, samphire, purslane and a herb purée.
Mr Murchison, 42, who has worked at the restaurant since 1996 and was awarded a Michelin star in 2005, also answered questions about his career, including his appearances on the BBC’s Great British Menu.
Sixth former Will Lawrance said: “I was really impressed with how quickly the food is presented on the plate and how neatly it is done. It gives you a real insight into the fine dining industry.”
