Secret of long life... tea and sardines on toast

WHAT’S the secret to the perfect cup of tea? Timing.

That’s according to Lorraine Hillier, owner of tea shop Upstairs & Downstairs, which recently opened in Duke Street, Henley.

She revealed her “secret” while chatting to Debbie McGee on her BBC Radio Berkshire show.

Lorraine, who also owns Friday Street coffee house Hot Gossip, said: “Roughly it’s about a teaspoon per person [of loose tea] and then I use a tea timer.

“You brew a black tea for five minutes, a herbal and fruit for four minutes and green and white tea for about three minutes.”
