TURKEYS from a family farm in Berkshire are to be served at some of the most prestitious restaurants in the region this Christmas.
Birds from award-winning Copas Turkeys have been selected for Michelin-starred restaurants including the Hand and Flowers in Marlow, Heston Blumenthals’ the Hind’s Head in Bray and Luke’s Dining Room in Cookham.
Luke Thomas of Luke’s Dining Room explained: “I try and source the best of British produce, be it local to my restaurants or not.
“Luckily, I have Copas Turkeys on my doorstep and access to one of the most amazing products in the food world.”
Tom Copas started selling turkeys back in 1957 when his father decided his son needed a project to keep him busy after leaving school.
That Christmas he sold 153 birds. Today, he and his family sell around 40,000 each festive season.
Produce from the farm in Cookham includes 25 different traditional British varieties including free range Bronze and free range organic turkeys which roam freely outside for 80 per cent of their lives.
The birds are hung to mature for 14 days, during which time natural enzymes in the bird bring out the flavour and tenderise the meat.
