Butcher offers pre-Christmas advice

A BUTCHER staged a pork-cutting demonstration at his shop in Watlington high street.

Tom Calnan, who runs Calnan Bros, hosted 27 guests at the evening event and advised them on how to cook particular joints.

He also revealed how his bacon is cured and sausages are made.

Mr Calnan said: “It went well. It’s about educating people and showing them what a whole pig looks like because when they come into the shop it has all been pre-prepared.

“The other part was talking through the cooking aspects and different techniques, making sure every part of the pig is used.



“The shop is busy at this time of year so it’s a good opportunity to show off our expertise.”

After the talk, the guests had a meal at the nearby Fat Fox Inn, which Calnan Bros supplies.

The starters included ballotine of pork and spiced pork belly. The mains were pig cheek, pork chops or blade of beef.

Mr Calnan said: “To have a chef do it the right way was great and everyone enjoyed it.”

The meal was followed by a talk by turkey supplier Fi White, from D’Oyleys Farm in Stadhampton.
